Vinification : grapes carefully selected plots only with particular exposure are harvested manually in plastic crates . Production is limited to 40 hl . for the grapes to reach optimum maturity . A second selection is made in the winery grapes on the sorting belt before crushing . Follow destemming , the must is pumped into stainless steel tanks with temperature management. Here is the first part of the alcoholic fermentation and maceration careful to have a balanced wine , round tannins and rich coloring . Towards the end of alcoholic fermentation , the wine is drawn in French oak barrique sites where malolactic fermentation takes place followed by a period of upgrading wine by aging for 15-18 months . Wine is bottled and aged at least 6 months bottle wine-cellar .

Serving recommendation : Consumer optimum temperature is 18 oC. It can serve red meat prepared in the oven or grill , game mid-sized and large Romanian traditional dishes based on meat , seasoned cheese .

POTENTIAL aging : wine can be aged in bottle (8-12 years) , under the cellar, thus gaining a velvety texture and a complex bouquet .
